Prepare Apples: Wash, peel, core and cut the apples into smaller pieces so they are cooked throughly.
Get Cooking: Add apples, water and sweetener to a small saucepan or slow cooker and cook over low heat until softened (about 40–45 minutes).
Add Spices: Throw in cinnamon, nutmeg, cloves, vanilla extract and a pinch of salt – the apples are softened so stir up those flavours!
Blend Mixture: Either use an immersion blender right in the pot, or transfer to a blender and puree until smooth and velvety.
Simmer again: Return the puree to the pot and bring it back down to a good simmer so that it cooks together as much as possible into a buttery spread, about 30–40 minutes or even more.
Cool It Down: Let it rest for 15 minutes before you pack away.
Cool and Store: Pour into clean glass jars, screw on lids and refrigerate for up to 2 weeks.
