Ingredients
  

  • 1 cup almond flour
  • 2 large eggs
  • 2 tbsp melted butter or coconut oil
  • 2 tbsp unsweetened almond milk
  • 1 tbsp keto-friendly sweetener (like erythritol or monk fruit)
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt

  • 1 Mixing Bowl
  • 1 Whisk or Hand Mixer
  • 1 Measuring cups and spoons
  • 1 Waffle maker
  • 1 Spatula

Method
 

  1. Instructions Prepare the Wet Mixture: Whisk together eggs, melted butter (or coconut oil), almond milk, sweetener and vanilla extract in a medium mixing bowl until smooth and well combined.
  2. Mix in the dry ingredients: Stir in the almond flour, baking powder and salt. Mix until you get a lump free thick batter, but do not over-mix as to retain the lightness.
  3. Preheat the waffle maker: Turn on your waffle maker and lightly grease it with butter or coconut oil to prevent sticking.
  4. Recipe for making the waffles: Pour approximately equal amounts of batter into a waffle maker. Cover and cook for 4-5 minutes, until the waffles are golden brown and no longer soft.
  5. Rest and serve: Let the waffles rest for about 2 minutes before removing. Serve warm with keto-friendly toppings like sugar-free syrup, fresh berries, or whipped cream.

Notes

  • Fry again, if you like them even more crispy.
  • Batter: Try not to over-mix the batter to make your waffles fluffy.
  • The texture will be best with superfine almond flour.
  • Start by heating up the waffle iron really well before adding any batter.
  • Keep the leftovers in an airtight container or just reheat them in your toast
