  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ cup pumpkin puree
  • cup erythritol or monk fruit sweetener
  • 1 large egg
  • ¼ cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup sugar-free chocolate chips

Method

  3. Combine Dry Ingredients: Combining almond flour, coconut flour, baking powder, spices, and salt in another bowl.
  4. Make the Dough: Stir in the dry ingredients and mix until a soft dough forms. Fold in the chocolate chips.
  5. Portion the Cookies: Spoon tablespoon portions on to the baking sheet and gently press down each one.
  6. Bake: Bake for 12 – 15 minutes or until the edges are golden and centers are set.
  7. Cool and Enjoy: Remove the cookies from the tray and cool on a wire rack for 10 minutes before serving.

  • Be sure to grab unsweetened pumpkin puree — not pumpkin pie filling!
  • If the dough is too sticky, chill the dough for 15–20 minutes.

  • Keep in an air tight container for 5 days, or can be put into the freezer up to a month.
