Ingredients
  

  • 1 small zucchini, sliced
  • 1 small yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, halved
  • ½ small red onion, cut into chunks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional)

Method
 

  1. Prepare the Vegetables: Rinse and cut up all of the vegetables to be of an even size which will prepare them for grilling.
  2. Season the Veggies: Combine the vegetables with some olive oil, garlic powder, oregano, paprika, salt and pepper in a large bowl.
  3. Preheat the Grill: Preheat either grill or a grill pan over medium-high heat. If necessary, lightly brush with some oil to avoid sticking.
  4. Grill the Vegetables: Lay vegetables on the grill in a flat layer. Char and cook 3–4 minutes per side or until tender.
  5. Rest and Serve: Take the veggies out and then sit them down for 5 minutes Top with fresh herbs at service.

  • Try grilling vegetables in a grill basket so that they don't slip through the grates.
  • Make sure not to crowd the grill (cook in batches if necessary).
