Creamy Keto Cheeseburger Soup | Low-Carb Comfort in a Bowl

Show some love

Keto cheeseburger soup is a warm, deliciously creamy, rich and “cheesey” low carb version of the all-American classic cheeseburger — no bun here though! Filled with ground beef, cheddar cheese, cream, and delicious seasonings, this soup is easy and keto-friendly. Most cheeseburger soups (including the recipe I based off of this one) are thickened with some sort of starch – not this one, heavy cream and cheese thickens things up and you won’t miss the thickening agents at all.

My fave is the tender beef swimming in melted cheese and savoury broth for a comforting bite in every spoonful. It’s great for a cool evening, meal prep or when you just want something warm and hearty, minus the carbs. And the soup is super customisable — you can put in bacon or cauliflower, even pickles, for that true cheeseburger flavour. Keto cheeseburger soup comes together fast, is easy to modify and is sure to satisfy the whole family!Whether you are new to keto or need a new dinner go-to, this soup brings the cheeseburger flavours to a bowl, without the guilt.

Ingredients

  • 1 lp ground beef
  • 1 tbsp butter
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • cups shredded cheddar cheese
  • ½ cup chopped celery (optional)
  • 1 cup cauliflower florets (optional, as a potato substitute)
  • Salt and pepper to taste
  • ½ tsp paprika
  • ¼ tsp mustard powder
  • Crumbled cooked bacon and pickles (optional toppings)

Equipment

  • 1 Large Soup Pot or Dutch Oven
  • 1 Wooden spoon or spatula
  • 1 Knife and chopping board
  • 1 Measuring cups and spoons
  • 1 Ladle
  • 1 Grater (for cheese, if using block cheese)

Method

  1. Brown the Beef: In a large soup pot, melt butter over medium heat. Stir in ground beef and brown. Drain excess fat.
  2. Sauté the Vegetables: Stir in diced onion, garlic, and celery. Cook for 3–4 minutes until soft and fragrant.
  3. Add the Broth: Add the beef broth and bring to a boil. Reduce heat to simmer.
  4. Stir in Cauliflower: Stir in cauliflower florets (if using) and bring to a boil; reduce heat and simmer for 7–10 minutes, or until cauliflower is tender.
  5. Make It Creamy: Reduce heat; stir in cream, cheese and seasonings. Cook and stir until cheese is melted and soup is smooth.
  6. Final Touches: Season to taste with salt and pepper. Allow the soup to sit for 5 minutes before serving. If desired, garnish with crumbled bacon or diced pickles.

Notes

  • Full fat dairy makes for best creamy texture and keto friendliness!
  • For more flavor, add a splash of Worcestershire or hot sauce.
  • Thicken it by using less broth or purée some of the cooked cauliflower.
  • You can use pre-shredded cheese, but fresh ones melt better.
  • Leftovers can be stored in the refrigerator for up to 4 days, or in the freezer for longer storage.
