Ingredients

  • 5 medium apples (peeled, cored, chopped)
  • ½ cup water
  • 3 tbsp powdered erythritol or monk fruit sweetener
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • 1 tsp vanilla extract
  • Pinch of salt

Equipment

  • 1 Saucepan or slow cooker
  • 1 Wooden spoon
  • 1 Blender or Immersion Blender
  • 1 Measuring Cups & Spoons
  • 1 Glass jar with lid

Method

  1. Prepare Apples: Wash, peel, core and cut the apples into smaller pieces so they are cooked throughly.
  2. Get Cooking: Add apples, water and sweetener to a small saucepan or slow cooker and cook over low heat until softened (about 40–45 minutes).
  3. Add Spices: Throw in cinnamon, nutmeg, cloves, vanilla extract and a pinch of salt – the apples are softened so stir up those flavours!
  4. Blend Mixture: Either use an immersion blender right in the pot, or transfer to a blender and puree until smooth and velvety.
  5. Simmer again: Return the puree to the pot and bring it back down to a good simmer so that it cooks together as much as possible into a buttery spread, about 30–40 minutes or even more.
  6. Cool It Down: Let it rest for 15 minutes before you pack away.
  7. Cool and Store: Pour into clean glass jars, screw on lids and refrigerate for up to 2 weeks.

Notes

  • You get a deeper, caramelised flavour by using a slow cooker.
  • Add sweetness to taste — with erythritol, monk fruit or stevia.
  • Slide a small pat of butter (or less traditional coconut oil) into your blender — for that extra-creamy texture.
  • Specter, Mix should be completely cool before sealing jars.
  • Store in the refrigerator for up to 2 weeks, or freeze for longer.
