  • cups almond flour
  • 2 tbsp coconut flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • 4 oz cream cheese (softened)
  • ¼ cup unsweetened almond milk
  • 2 tbsp melted butter or coconut oil
  • 2 tbsp erythritol or monk fruit sweetener
  • 1 tsp vanilla extract

Method
 

  1. Preheat Waffle Maker: Preheat your Belgian waffle maker while you make the batter.
  2. Mix Dry Ingredients: In a mixing bowl combine almond flour, coconut flour, baking powder and salt.
  3. Blend Wet Ingredients: Beat eggs, cream cheese, almond milk, butter or ghee sweetener and vanilla in another bowl until smooth.
  4. Combine Batter: Very slowly add in the dry with the wet until a thick batter forms.
  5. Cook Waffles: Pour batter into waffle maker (greased) Seal and cook for 4-5 minutes until golden brown and crispy.
  6. Serve: Allow waffles to rest for 2 minutes then serve warm topped with your favourite keto toppings!

  • For better batter, I recommend using room temperature cream cheese.
  • Mix only until just combined, to keep the waffles from becoming too dense.
  • Cook waffles for about 30 seconds for more crunch.
  • Freeze the waffles that cooled down and use a toaster to make it warm again.
  • Change the almond milk to heavy cream for a richer taste.
