  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 cups zucchini, chopped (as noodle substitute)

  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • 1 tsp Paprika
  • Salt & pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ½ cup grated parmesan

Method
 

  1. Saute Aromatics: In a large soup pot, heat olive oil. Add the onions and garlic, cooking until soft and fragrant.
