Throbbing with the fragrance and flavour of eggs, this creamy Jim-Jam made by uploading whisked eggs into simmering broth in thin ribbons is completely spell-binding. It is also keto as it does not include cornstarch to thicken and instead uses low-carbohydrate methods to reach a creamy, rich texture. The base is generally chicken or vegetable broth seasoned with garlic, ginger, and a splash of soy sauce or coconut aminos for umami.

Typically adorned with some chopped green onions, sesame oil, or a sprinkle of chili flakes it offers a hearty umami loaded spoonful every time. Ingredients
  

  • 4 cups chicken broth (unsweetened, low-sodium)
  • 3 large eggs
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp sesame oil
  • ½ tsp minced garlic
  • ½ tsp grated fresh ginger
  • Salt and pepper to taste
  • 2 tbsp chopped green onions (for garnish)
  • Optional: pinch of chili flakes

Method
 

  1. Heat the Broth: In a medium saucepan, bring chicken broth to a gentle boil.
  2. Add Seasonings: Mix in the soy sauce, sesame oil, garlic and ginger. Let simmer for 2 minutes.
  3. Whisk the Eggs: Whisk the eggs in a small mixing bowl, furiously, until they are smooth and ever so slightly frothy.
  4. Create the Egg Ribbons: Reduce heat to low. Continue to whisk as you slowly pour the egg into the simmering broth, stirring in a circular motion with a fork or chopsticks.
  5. Season and Garnish: Add salt and pepper to taste. Serve hot in bowls garnished with green onions.

  • Ever whisk eggs before pouring them in for silkiest of ribbons.
  • Gently pour beaten eggs in, slowly, until each piece of egg becomes a strip and texture silky.
