Keto caramel sauce, it was only last week when I finally realised just how much it did. Sweetened with erythritol or allulose instead of sugar, this rich caramel sauce offers the full flavor of regular caramel—without a sugar rush. It is buttery, golden, has a little bit of saltiness and the perfect sweetness that you can pour over keto desserts like brownies, cheesecakes or pancakes. Keto or not, reducing sugar consumption is a positive choice for anyone looking at the big picture and this sauce does not compromise on taste.
Real caramel is made with sugar and corn syrup but this low carb caramel is thick, creamy, and just as luscious using heavy cream, butter and natural sweeteners. Plus, it requires a handful of ingredients and very little time to whip up. Even in the fridge to reheat then! You can drizzle it over your morning waffles or pair it with a slice of keto pie — the options are endless and you will be craving for more. You — and it is) will bound to dribble this on everything you cook, or sneak tastes by the spoonful straight from the jar. This keto caramel sauce is living proof that you can have a sweet treat while sticking to a low carb lifestyle! Your new favourite dessert sauce!

Method
- Melt the Butter: Brown butter in a medium saucepan over moderate heat.
- Add Sweetener: Add the erythritol or allulose and mix well. Whisk until the sugar begins to melt and lightly caramelize ~3–4 minutes.
- Pour in the Cream: While whisking add the cream gradually as well. This is normal—to also bubble up.
- Simmer and Thicken: Turn the heat to low and simmer the sauce for about 8–10 minutes, stirring occasionally until it has thickened and darkened.
- Finish with Vanilla & Salt: Remove from heat. Add vanilla and a bit of salt for balance of flavor. By cooling slightly it will also thicken up a lot more on resting.
Notes
- It is easiest with allulose that will really help you with the caramel texture.
- Do not leave the kitchen while cooking — it burns very quickly.
- As sauce cools down, it will thicken, reheat sauce slowly if necessary.
- Serve in a jar and store in the fridge for up to 2 weeks.
- Brewery Note: Shake a little if it separates – and shake (or stir) before reusing!
