Ingredients
  

  • 1 cup cauliflower rice (cooked and cooled)
  • 2 tbsp rice vinegar (unsweetened)
  • 4 nori sheets
  • 200g fresh sushi-grade salmon (or smoked salmon)
  • 1 avocado (sliced)
  • 1 small cucumber (julienned)
  • 1 tbsp cream cheese (optional)
  • soy sauce or tamari (for dipping)
  • Wasabi and pickled ginger (optional, for serving)

Method
 

  1. To Make Cauliflower Rice: Cook the cauliflower rice until tender and let it cool. Blend in rice vinegar to add the real taste of sushi rice.
