Ingredients

  • 1 lb (450g) beef sirloin, thinly sliced
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream (full-fat, unsweetened)
  • 1 tsp Dijon mustard
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Equipment

  • 1 Large skillet or frying pan
  • 1 Sharp Knife
  • 1 Cutting Board
  • 1 Wooden spoon or spatula
  • 1 Mixing Bowl

Method

  1. Brown the beef: In a large skillet or frying pan, melt butter or heat olive oil over medium heat. Add beef strips and cook over high heat until well browned. Remove and set aside.
  2. Saute the Vegetables: In a large skillet, sauté onions, garlic and mushrooms until soft and golden brown and fragrant.
  3. Make the Sauce: Add beef broth, dijon mustard and paprika. Stir together and allow to simmer for 5 minutes, until thickened slightly.
  4. Add Sour Cream: Lower the heat and mix in sour cream. Stir gently until the sauce turns creamy and smooth without curdling.
  5. Combine and Finish: Return the beef to the skillet. Mix everything together and cook for another 5 minutes. Garnish with parsley.
  6. Serve: Serve hot over cauliflower rice, zoodles, or shirataki noodles for a hearty keto meal.

Notes

  • Slice beef thin to make it cook faster and make it tender.
  • Never boil sour cream — keep heat low to avoid curdling.
  • Opt for the full-fat sour cream for the most keto-friendly results.
  • Mushrooms provide depth — mix types for even more flavour.
  • Enjoy immediately with keto approved side dishes for the best flavour.
