Ingredients
  

  • 1 medium head of cauliflower (chopped)
  • 2 tbsp butter
  • ½ onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups chicken or vegetable broth
  • ½ cup heavy cream
  • ½ cup shredded cheddar cheese
  • ¼ tsp ground black pepper
  • Salt to taste
  • 2 tbsp chopped chives (optional)
  • 2 strips cooked bacon (crumbled, optional)

Equipment

  • 1 Large Soup Pot or Dutch Oven
  • 1 Blender or Immersion Blender
  • 1 Knife and chopping board
  • 1 Ladle
  • 1 Measuring cups and spoons
  • 1 Wooden spoon or spatula

Method
 

  1. Sauté the Aromatics: Melt butter in a large soup pot over medium heat. Finely chop the onions and add them with the garlic, then sauté in ghee or oil until soft and fragrant.
  2. Add Cauliflower and Broth: Add in chop cauliflower and stock. Boil (stir often) and simmer for 15–20 minutes. or until cauliflower is tender.
  3. Blend the Soup: Take off heat and blend with an immersion blender (or transfer to a regular blender) until smooth and creamy.
  4. Stir in Cream and Cheese: If you blended the vegetables separately, return them to the pot with broth. Add the heavy cream and shredded cheese, stirring until completely melted and smooth.
  5. Season and Serve: Add salt and pepper to taste. Or serve into bowls, and top with chives (and crumbled bacon if you want to indulge)!

Notes

  • Just get the pre-chopped cauliflower to cut down on time.
  • And to take it over the top, throw in a tablespoon of cream cheese.
  • Or puree some of the soup to your taste if you want it less chunky.
  • Keep the leftovers in an air tight container in the fridge for upto 3 days.
  • Heat gently again on low flame to keep it creamy.
